I often feel like I cook the same meals over and over. So tonight, I decided to add a twist to my usual meatloaf. I'm calling them meatloaf muffins, but they look more like meatloaf cupcakes since they're topped with ketchup and mashed potatoes. I thought about topping them with mashed potatoes and gravy (I'll try that next time).
For my meatloaf, I use a McCormick seasoning packet. I've tried other recipes for meatloaf, but this is the one we like the best. This recipe calls for 2 pounds of ground beef/turkey, 2 eggs, ½ cup of milk, ¼ cup of bread crumbs, and ½ cup of ketchup. I added about ½ an onion, chopped. And for the bread crumbs, I like to use the Progresso Garlic and Herb bread crumbs. Once I had the mixtures all mixed up, I put it in my large sized muffin tin. I baked the meat muffins for an hour like the recipes says, but since these are smaller than my usual big hunk of meatloaf, I think I should've shaved off a little time.
Once the meatloaf muffins were done baking, I topped them with ketchup and mashed potatoes. I used my cupcake decorating thing to neatly add the mashed potatoes. Then I sprinkled them with cilantro because I like to put cilantro in just about everything.
My meatloaf muffins were yummy! I even garnished one with cabbage...
Dinner is served!
